Chicken and Mushroom Soup

Ingredients:

• 1/2 lb boneless chicken breast
• 4 tbsp sesame oil
• 2 cups chicken stock
• 2 tbsp sherry
• 1 cup fresh mushrooms, quartered
• 2 tbsp fresh parsley, chopped

Steps:

1. Thinly slice the chicken breast meat.
2. Allow the chicken stock to a simmer, then add the chicken and mushrooms.
3. When the soup starts to boil again and all of the ingredients rise to the top, remove the pan from the heat.
4. Add the sesame oil and sherry, and taste for seasoning. Add salt and pepper if necessary.
5. Serve in individual soup bowls and sprinkle with parsley.
